Slow Cooker Sweetpeatato Chipotle Soup


I'm kind of shocked I haven't posted this yet, it's a super easy vegetarian crockpot recipe that I've made 3 or 4 times since baby sparkles made her grand entrance. Not only is it easy to make but it freezes well too and contains some of my favorite things sweet potatoes, chipotle chilis, and cilantro.


What you need

1 1lb bag of dried peas
2 onions peeled and diced
2-3 sweet potatoes peeled and diced
2 bay leaves
1 tsp turmeric
1 1/2-2tsp salt
1 tsp chili powder
1 tsp paprika
1/2-1 cup cilantro washed well
1/2-1 chipotle chili in adobo with seeds removed
6 cups of water
1 tsp lemon juice
1 tsp sugar or honey
1 can of coconut milk

What to do
Rinse and drain the peas and add them to the crockpot along with everything EXCEPT the tsp of lemon juice and the tsp of sugar. Cook on low for 4-6 hours until everything is mushy. Add the lemon juice, sugar, coconut milk and more salt to taste. Remove the bay leaves. If desired, let cool and puree in a food processor. My kids would not eat this lumpy, but happily gobbled it up after it had been pureed and served alongside rice.

Sweet n' Spicy Chili with Blackened Onions


My husband says this is the best chili ever. Not the best vegan chili, or the best soy free chili,
but the...
best...
chili.......

...ever


My two year old says, "Mama can I has some more chiwi please." (He's unbearably cute and loves his chili). My daughter says, "can I just have beans and rice"......she's not a chili fan. I don't know about best chili ever, but this is a darn good recipe and you can certainly add (or subtract) things to adjust to your personal tastes. It's also easy to make, vegan, and soy free (check your ingredients carefully), and I've fed it to carnivores with good results. I topped mine with avocado, crushed tortilla chips, and cilantro, and I really wish I'd snapped a picture beforehand because it is a lovely chili. I guess you'll just have to make it to find out for yourself. :)

What you'll need

1tbs oil
2 onions sliced
3 cups cooked (seasoned to your liking) black beans
1 28oz can of baked beans
1/2 cup soy free BBQ sauce
2tbs plus 1tsp chili powder (divided)
1/4 tsp salt plus more to taste (optional)
cayenne, jalapenos, or other spices to taste

Heat the oil in a cast iron skillet over medium high heat. Add the onions 1/4tsp of salt and 1tsp of the chili powder. Cook for 10-20 minutes stirring occasionally until desired doneness. I like them almost burnt, but you could lower the heat and go for a more caramelized (browning) effect. Now add the onions to a large pot and stir in the rest of the ingredients. Heat through. It's that simple. Add whatever toppings you like.

Vegetarian Cinco de Mayo

Cinco de Mayo is a big deal in our house. Any occasion that permits me to eat Mexican food is a big deal, so Cinco de Mayo, Tuesdays, and every third Sunday or so rank pretty high on my list of good days.

Originally I was to be spending tomorrow evening at an appreciation dinner. Due to sick contagious kiddos I will instead be spending tomorrow night at home, much to my husbands delight. Unfortunately I had nothing planned out, but a plethera of old recipes to choose from, so I think we will be ok.

Vegetarian or vegan burritos

Oh my! I almost forgot about this dish, it was so tasty! I can't believe I haven't made it since.

These are so simple it's ridiculous, even my super A.D.D sleep deprived self can make them.

These are very tasty, and another great taco for hot days. Great for avocado lovers, and well received by those who have tried them.

After having some fajitas in California with just a hint of tequila in them I couldn't resist but try them out on my own. You could most certainly omit this ingredient if you like.

This enchilada sauce is super simple and (check your ingredients) gluten and soy free! Winning! You could use it as a substitute for any enchilada recipe you like.

Looking at this I am thinking I will be making ALL of these in my near future....perhaps I shouldn't blog while hungry.

Other ideas....
Nachos - This is another really simple idea, use beans you've made or if you must use canned check out Amy's brand organic refried beans. Let family members add their favorite toppings, jalapeƱos, avocados, olives, diced onion, grilled veggies....you get the idea. You can make it as simple or elaborate as you like.

Seven layer bean dip....or seven layer bean dip casserole Once again, you can totally customize this to suit your families needs.

Tamales! If you have access to tamales go for it. Be they from your freezer, your favorite restaurant, or your local farmers market (If this is the case I don't wan to hear about it, I'm so jealous you don't even know). Serve with beans and rice.


...No fooling.....I seriously just took a break to make some chips and dip....alright...I'm settled again...

Mexican "pizza"
You can easily make your own Mexican pizza in the toaster oven. Brush a corn tortilla with olive oil and toast until crispy. Add toppings such as refried beans, salsa, cheeze, cheese, and olives. Heat again until warmed through. Add more toppings such as chopped tomatoes, lettuce, onion, jalapeƱos...etc. This has always been a favorite in our house, it's quick, easy, and an excellent meal on a hot day as it doesn't require the use of an oven.

Now that I've made the decision that much harder for myself, I'd love to know what you are planning on making.

"Cream" of Broccoli Soup


This soup was plain but tasty, and very similar to a lot of other green soups I make for the kiddos. they gobbled it up and asked for more. It makes a very nice compliment to a sandwich on a cold day. It's souper simple (hehe sorry), and requires few ingredients. It gets most of it's creamy texture from potatoes. You can use 1/2 cup of any sort of milk I suppose, whatever tickles your fancy or doesn't happen to turn members of your family into an anaphylaxis mess. :)


4 cups cooked broccoli florets
4 baked potatoes with skins removed.
1/2 cup milk (I used rice)
Veggie stock to desired consistency
Salt, pepper, seasoning salt to taste

Put the broccoli, potatoes and milk into your food processor and blend, add stock and blend until desired consistency. Pour the whole mess into a pot and heat through on the stove, adding salt, pepper, and seasoning salt to taste. I added a good bit of salt to ours. I added cheese and sour cream to the tops of the kiddos bowls, and I think they also had toast with theirs. This was even better the next day as leftovers.

Easy Peasy Mac and Cheesy


I was going to call this "easy as box mac and cheese".....but I over think things....I'm not sure if it really is as easy as box...It takes about the same amount of time as the box mac and cheese.However, instead of waiting around for the water to boil and the noodles to cook you need to be grating cheese. So really it's only "takes the same amount of time as box mac and cheese", not quite the same ring to it.....

I told you I over think things.

It worked out well though, because I got to use rhyming words. I like rhyming words, they make me giggle.


Anyhoo, this is the only mac and cheese my kids will eat, and I have to thank my friend Stefanie for giving me the idea. She served something very similar for Easter one year and when she told me how simple it was (1lb noodles, 1lb cheese, butter, garlic salt, and pepper) I had to try it out. Of course I added a 16oz bag of frozen organic veggies, and sometimes I add other things*.

What you need:

1lb dried noodles
4 cups of shredded cheese (shred mine while I'm waiting for the water to boil)
16oz frozen organic veggies of any kind. (I have used broccoli, peas, mixed veggies, and even a bag of stir fry veggies.)
3tbs butter
garlic salt and pepper to taste

Here's the tricky part. Depending on the type of noodles you use and the type of veggies you use your cooking times/when you add the veggies will vary. I am calculating this for the cook times on the organic penne I bought, and the pea/carrot/corn mixture I bought. Please do your own math to adjust for different types of noodles and veggies. The penne had a 12 minute cook time and the veggies had a 6 minute cook time, so I just dumped the veggies in half way through. Twelve minutes might be too long for regular elbow macaroni noodles.

Boil the water and shred the cheese.

Add the noodles and cook for six minutes.

Add the veggies and boil for six more minutes.

Drain and return to pot.

Add the butter one tbs at a time and stir in the cheese a little at a time so it melts and doesn't turn into one big clump o' cheese.

Add garlic salt and pepper to taste.


My kids love this. I've even given it to their veggie hating friends with success. My kids won't eat box mac and cheese, so when I'm tired this is a great go to meal. It's easy, fast, cheap, and I usually have everything on hand. Make sure to use garlic salt instead of plain old salt, I believe that's what gives it flavor and turns it from noodles and melted cheese into a real dish.



*Variations include "chili mac", where I stir in leftover chili after I add the cheese, and "baked bean mac"....you get the picture.

An acceptable use of flour tortillas


You may remember this post, where I mentioned that we don't buy flour tortillas with the exception of burrito and chimichanga use, or in the case of cooking for company. Well company is coming, and included in that are two beautiful (but picky) little girls, and one slightly less picky man. In the interest of planning ahead I decided to make and freeze some flautas so we will have a couple of quick meals to eat while they are here. Hopefully they will go over well, and I will lose my reputation as the aunt that makes the "weird food". So here is a recipe for not weird baked vegetarian flautas that you can make and freeze should you wish. If you like things spicy consider adding some salsa to the mix.

Totally Not Weird Flautas

1 block of cream cheese softened
1 can pinto beans, drained and rinsed
1 can of green chilis
garlic salt, salt, cayenne and pepper to taste
Flour tortillas (ten pack)

Mix together the first 3 ingredients and add seasoning to taste.

Divide the filling evenly between the tortillas, placing it in the center of the tortilla.

Roll up tortilla and place flap side down on a baking dish. Bake at 375 for about fifteen minutes, or until tortilla becomes crispy at the edges.

If you wish to freeze these put them on a baking sheet and place them in the freezer to freeze individually first. Once frozen you can bag them and tag them. Errr that is put them in one labeled Ziploc freezer bag.

Vegan BBQ "Wings"


I am not going to pretend like this recipe is revolutionary, it doesn't take a lot of creativity or know how to say "hey I bet this would taste good with BBQ sauce". It is probably also not low fat, or low calorie....but it is very yummy, vegan, packed with protein, and it was a great addition to our game night last night. I will for sure keep this recipe in mind next time we have mixed company*. It was so simple to make, and I'm actually quite ashamed of how much of this came out of a box or bottle, but I served it up with some steamed veggies and brown rice, so I think that makes up for it.


The "Wings"

1 package of seitan (drained)
4 tbs vegan "butter"
5 cloves crushed garlic
Tabasco sauce

The sauce
1/2 cup Amy's Organics sweet and spicy BBQ sauce (or sauce of preference)
Cayenne to taste

Melt the "butter" over medium heat and add a few dashes of Tabasco. When the butter is fully melted add the seitan and brown on both sides. Lower the heat to medium low and add the garlic, cook for a few minutes more, until the garlic has lost a little of it's bite. In a separate bowl mix the BBQ sauce, and cayenne. Toss the cooked seitan in the sauce until coated.



*For us mixed company indicates a gathering of vegans, vegetarians, and carnivores. I think this recipe would be received well by all.
