Lemony Chickpea and Rice Salad
It's hot. And I'm fighting off a cold. So I wanted a meal that would be refreshing, and light, with flavors strong enough that I might actually be able to taste despite my stuffy nose. This fit the bill quite nicely. It was refreshing and tasty. I will be making this again.
What you need:
2 tbs rice vinegar
1 tbs lemon juice
3 tbs oil
1/4 tsp salt
1 tsp sugar
1 tsp ginger
1/2 tbs Dijon mustard
cayenne to taste
1/4 cup chopped cilantro
3 cloves of garlic peeled and pressed
2 cups cooked chickpeas
1 1/2 cups cooked rice
More cilantro and avocado for garnish
Whisk together the first ten ingredients.
Stir in the chickpeas and rice to coat.
Refrigerate, and when ready to serve garnish with more cilantro and avocado.

I love chickpeas and I would love a salad like this but unfortunately I would be the only one in the house eating it. It won't stop me from making it though, thanks!
ReplyDeleteDebbie, I'm almost ashamed (but not really) to say this, but I ate this WHOLE thing all by myself. So it can be done...in one day none the less. :) My son had a bite or two before I devoured the rest, but it was mostly me eating it. I hope you enjoy it!
ReplyDeletemy current obsession is ginger, so the fact that's in this along with mostly things I already have means ill be trying this. sounds so light and refreshing. I could have used this the other day when it was 90 here ( i know i shouldn't be complaining)
ReplyDeleteJosc I am a huge ginger fan too. Have you tried the ginger lemonade from TJ's? I don't know if they still have it. Good stuff.
