Mujadara in a Pita with Spicy Eggplant Sauce

I saw mujadara over at The Vegan Mouse, and my first thought was why have I never made this?? Lentils.......onions....rice??? This is cheap, this is easy, this is flavorful........it will help if you like the flavor of onions, and I really really do. You will find recipes for mujadara all over the web, I chose a simple one that involved only rice, lentils, salt, pepper, cumin, and onions...I added a bay leaf while it all cooked up, but other than that I followed the recipe pretty closely....I wish I could find that recipe now. It is bookmarked on my other computer. I will add it when I get the chance.

Mujadara is very tasty on it's own, but I wanted a little zing to make it into a pita sandwich the next day for lunch. I thinly sliced an eggplant and pan fried it in about 1tbs of oil over medium heat, along with one onion also thinly sliced and 1/2 tsp of salt. I cooked the eggplant for ten minutes, then flipped and cooked for ten more minutes. Then I added a jar of tomato paste mixed with one cup of water (make sure you lower the heat before you add this as it will splatter a good bit). I simmered this covered for about 20 minutes until the eggplant cooked into a mush (mmmmmmm eggplant mush). I removed it from the heat and added about 1/2 cup of heavy whipping cream, more salt, and a generous amount of cayenne. I actually think this sauce would be quite good on it's own as a dip for pita bread, or over rice. I was inspired by a Persian eggplant dish that I have been wanting to make for a while. However I was missing some key ingredients, so this was my compromise. You can use 1/2 cup of coconut milk to replace the heavy whipping cream.

In short this dish will be making the rotation, it is warm and comforting and I imagine it would be quite good in the summer months with some sort of cucumber yogurt sauce. Most of the onions are on the side, which appealed to my daughter, and it's super cheap which appeals to all of us. I heart lentils, how about you?

Tomato Chutney Pita Pizza

The title kind of says it all. This is just a whole wheat pita smothered in tomato chutney, with mozzarella and chopped cilantro leaves. This would be another fabulous pizza on chapati recipe. But without the time to make chapati today (read...it's too fricken hot to stand over a stove for any length of time) a whole wheat pita made a fabulous replacement. The kids loved these.

Simple Meals and Chili Ten Ways

I went to the farmers market this weekend and picked up some produce along with a lovely ciabatta bread. I brushed it with a mixture of melted butter, crushed garlic, and cayenne pepper, then sprinkled it with parmesean cheese and toasted it in the toaster oven. So simple, so good. White bread is a sometimes food...... but if I'm going to eat it, it might as well have butter and garlic on it.

I served it up with a spinach salad, topped with strawberries, feta cheese, and a light vinaigrette.

Chili Ten Ways
brought to you by Bubba Mc chompsandcries

Among my finds at the market were bell peppers, and zucchini. Perfect for a vegetarian chili, which turned out to be just the right thing to make this week. You see, my son at his best will eat a wide variety of foods, with his favorites being beans, rice, and yogurt. At his worst however he narrows down the foods he will eat into two groups, chili.........and things he will tolerate if mixed with chili. And this week he has been sick, and teething. So in my effort to get him to eat a variety of foods I have come up with ten ways to serve chili. This will work well if you also have a toddler who refuses to eat anything but chili....or possibly also if you just have a bunch of leftover chili, which is the more likely scenario out of the two. You can serve chili....

1.) Topped with cheese, sour cream, avocado, and crushed tortilla chips.

2.) On a baked potato.

3.) Over nachos.

4.) As enchilada filling.

5.) In redneck casserole. That's chili in a casserole dish topped with tots, baked, and then sprinkled with cheese.

6.) Mixed in with spaghetti sauce.

7.) Mixed in with mac and cheese.

8.) Over rice.

9.) As the filling for a shepherds pie sort of dish. Chili, topped with mashed potatoes and baked.

10.) On a grilled cheese sandwich.

There you have it, not gourmet, not revolutionary, and most of these recipes involve potatoes.....I just noticed that. However, I never said I was a chef. Just a mom out to prove that you can eat well on a budget.
